Carne de Vinho e Alhos: Madeira's Wine and Garlic Pork

11 October 20264 min readFunchal · Madeira

If espetada is Madeira's celebration dish, carne de vinho e alhos is its Christmas one: pork marinated for days in wine and garlic, then cooked until it falls apart. Here is how it is made, when to eat it and what to order alongside.

What is carne de vinho e alhos?

Carne de vinho e alhos is pork marinated in wine, vinegar, garlic and bay leaf, then cooked in cubes until tender and golden. The name simply means "meat of wine and garlic". The marinade, called vinha d'alhos, is the whole point: it flavours the pork deeply and keeps it moist through cooking.

How is it made?

The meat rests in the marinade for two to three days, often in a cool pantry or fridge. Cooks use pork shoulder or loin cut into chunks, plus plenty of crushed garlic, bay leaf, salt and a mix of white wine and wine vinegar. After draining, the pork is fried or simmered slowly in its own fat, so the edges crisp while the inside turns soft. Recipes vary house by house, which is why every Madeiran grandmother has an opinion.

When do Madeirans eat it?

It is most closely tied to Christmas and the festive weeks around it, when families marinate pork at home and kitchens fill with the smell of garlic. Outside December you will still find it in traditional restaurants, but it is not always on the daily menu. If you visit between late autumn and early January, you are in the best season to try it.

Is it related to vindaloo?

Yes, the two share an ancestor. Portuguese sailors carried the idea of flavouring meat in vinho e alhos to Goa, where local cooks swapped in spices and chilli and the name became vindaloo. The Madeiran dish kept the original: no heat, just wine, garlic and pork.

What do you eat with it?

Classic partners are bolo do caco, the island's garlic flatbread, fried potatoes, steamed sweet potato or milho frito, the crispy fried maize cubes. A simple salad and a glass of local red or a cold beer cut the richness well. For something sweet afterwards, try a slice of bolo de mel.

Where should you try it in Funchal?

Look for small, traditional restaurants in the Zona Velha and the streets around the Mercado dos Lavradores, where home-style cooking is the norm. Ask for "carne de vinho e alhos" and check that it is made that day: the best versions have a visible crust and a sharp, garlicky aroma. Portions are generous, so share if you are also planning a starter.

How does it fit with a day on the water?

Eat it the evening after, not before. A hearty, garlic-heavy plate is better saved for dinner than eaten ahead of a boat trip. On a private Chifbay trip from Marina do Funchal, food and drinks are included on board, so you can enjoy lighter local flavours at sea, then finish the day in town with something properly traditional. The Sunset Trip pairs especially well: it leaves 1 h 15 before sunset, and you are back in Funchal with an appetite.
